There's not much better than a warm slice of banana bread and fortunately it's IC friendly!
Banana Bread
4 eggs
5 ripe bananas
1 c shortening
2 c sugar
4 c flour
1 t salt
2 t soda
1 c walnuts (optional)
Mash bananas and then beat together with eggs. Set aside. Cream shortening and sugar. Add salt, soda and banana mixture. Add flour last. Bake at 300 for 1-2 hours. This will make 2 loaves.
I like to sprinkle cinnamon and sugar on the greased pan before pouring in the batter--it gives the loaf a nice touch when it comes out.
